The hotel heiress was left open-mouthed when Cy Waits pulled out a ring box and placed it on their table.
But while the box contained a huge rock, it was not for her wedding finger.
Paris, who this week confirmed she had split from Vegas club owner Waits, declared that she was 'relieved' he hadn't got down on one knee because she wasn't ready to marry him.
The scenes screened in the latest episode of Paris's reality show - The World According To Paris - showed the blonde socialite in happier times with Cy.
The pair were seen kissing, frolicking on the beach and even completing a zipline course as they spent New Year together in Cabo San Lucas, Mexico.
Earlier this week Paris appeared on a US chat show to confirm she is single again.
She said: 'We're not together any more. I love him and we remain really good friends,' she said, tactfully.
'I feel like the relationship ran its course. We'll see what happens in the future.'
